| After many requests, Dianna Lucia has graciously given us her absolutely wonderful Biscotti recipe. Making Biscotti the first time can be a little tricky so Dianna said she'll be glad to help and answer any questions for those of you giving them a try. Preheat oven to 350 degrees Mix together first: 3 eggs 1 teaspoon vanilla 1 cup oil 1 cup sugar Add baking powder and flour together: 1-1/2 Tablespoons baking powder 3-1/2 cups flour Gradually add to wet ingredients Optional: chocolate chips nuts (Dianna uses 3/4 cup chopped walnuts in hers) dry fruit coconut drizzle chocolate You can try different flavored extracts as well. The secret to the smooth texture is using an electric mixer. After you add all the dry ingredients into the wet ingredients, it might seem hard to handle. Work it slow; it will mix. After the batter is mixed together add your optional extras and mix by hand. This batter makes two logs. The logs are 3 to 3-1/2" wide by 12" long. You can experiment with different sizes. After you shape your log place on parchment paper on a cookie sheet and place in oven. Bake for 30 to 45 minutes. Everyone's oven is different. I check them at 30 minutes; you just want them to be golden brown. After you take them out, wait a minute and cut each log diagonally about 1 inch thick. It helps to use a serrated knife. Separate each cookie at that point and turn them on their sides. Place back in the oven for 3-5 minutes on one side; turn with tongs and then 3-5 minutes on the other side. Brew a big pot of coffee and enjoy this delicious cookie. Bon Appetit! |
